I thought rather than post any pictures about knitting today,  I would pass along one of my favorite summer time recipes.  This is a family favorite, and its even pretty darn healthy.  I don’t know the original source of the recipe but it’s one of the recipes I made sure to copy before I moved out on my own.  The recipe is from one of the yearly Southern Living Cookbooks, though I can’t recall what year

 *Despite the name of this dish, it is not very spicy at all, the lime flavor comes through much more than the jalapeno.  Best served with Spanish Style rice and big salad.

Grilled Lime Jalapeno Chicken Breasts

 4 chicken breast halves, skinned and boned

1/4 cup vegetable oil

1/2 cup lime or lemon juice

1 1/2 tsp garlic powder

1 TBSP minced Jalapeno pepper

Salt and Pepper to taste

Place each chicken piece between waxed paper and flatten to 1/4 inch with meat mallet.  Combine oil, juice, garlic powder, and jalapeno and mix well.  Pour marinade over chicken and marinade for 1-2 hours (no more or the acids will break the chicken down too much).

Grill Chicken about 7 minutes on both sides seasoning with salt and pepper to taste
